
Thai Turkey Burgers-
1 lb ground turkey breast
1/2 cup shredded carrot (approx 1 medium carrot)
1/2 cup shredded zucchini (approx 1 medium zucchini)
1/4 cup chopped cilantro
1/3 cup of a red onion, chopped finely
1/2 teaspoon salt
2 tbsp of sesame oil
1 tube of gourmet garden Thai seasoning stir in paste
2 tbsp of badia complete seasoning
1/2 teaspoon red pepper flakes
pinch of pepper
1 tbsp coconut oil
5 French bread burger bun
lettuce leaves and red onion
Cut the buns in half and toast with olive oil in a pan.
Combine all peanut sauce ingredients in a blender and whisk until smooth. Set side.
Add all burger ingredients in a large bowl and stir to combine.
Heat a large skillet over medium heat.
Add patties and cook on medium-low heat for about 3-5 minutes per side.
If desired and top with lettuce, patties and a drizzle of peanut sauce.
Peanut sauce
1/4 cup smooth peanut butter
1 tbsp rice vinegar
1 tbsp tamari or soy sauce
1 tsp sesame oil
1 small garlic clove
1/2 inch knob fresh ginger (roughly size of your thumbnail)
Sweet potato air fryer fries
Ingredients
2-3 Sweet Potatoes
2-3 Tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/2 teaspoon garlic powder
Slice them into long and skinny french fry pieces about 1/4 inch to 1/2 inch wide. Thinner fries will be crispier.
Preheat the air fryer to 400 F.
Spray olive oil on the air fryer basket to coat the bottom. This is separate from the 2-3 Tablespoons called for in the recipe.
